“GLM 40” Highlight in Food: Veggie Carb Substitutes

Our GLM staff have selected Veggie Carb Substitutes as an honorable highlight in the area of Food. In 2018, many people embraced using more fiber rich vegetables as carbohydrate substitutes. We see recipes emerging that are super easy, allergy friendly, gluten-free, and very delicious. Many easy veggies instead of carbs substitutes that were on the top of the list are creamy mashed cauliflower; sweet potatoe fries, spaghetti squash; zucchini noodles (thin ones for salads and stir fry, and sheets for lasagna!); lettuce, collard or cabbage wraps; cauliflower rice and portobello mushroom ‘burger buns’. Pumpkin and beets emerged as tasty treats to expand to the healthy menu and dessert options. Earlier this year, many of us discovered that possibilities are endless and these veggie substitutes are often much cheaper than store bought low carb products. They are absolutely a necessary yet great way to squeeze an extra serving of healthy vegetables into your day.
