When looking to add something new to your culinary repertoire consider adding plenty of lentil dishes on the menu this upcoming year. What’s so exciting all of a sudden about these legumes? Well, several studies have pointed out the benefits of overall legume consumption on prevention and management of chronic disease, but the beluga lentils rich black color that give it an edge on other lentils. Any time a fruit, veggie, or even a bean is very rich in color; the more color, the more benefit to your health. Black anthocyanin in these little beans have been found in other foods to be tops in fighting inflammation, cancer and heart disease. Theses lentils are low in fat and high in protein and fiber, but they have the added advantage of cooking quickly.
